Brewed with a rare Sake rice called ‘Aiyama’ (Nanbu Bijin is one of a few producers currently using this variety) and milled down to 50% of its original size, this is a sake of unique character. Toji Junji Matsumori (the head brewer) and team have somehow, inexplicably achieved a sake of supreme balance, delivering acidity, Umami and sweetness all in glorious symphony, capped with a long refreshing finish. This is a London Sake team favourite.

Founded in 1902 in Ninohe city, Iwate, the original brewery, Kuji Shuzo, was named after founding Juji family and originally produced soy sauce.

A real home-grown speciality brewed with local "Gin Ginga"rice, a yeast known as "Giovanni" as well as subsoil water from nearby Iwate Natural Park. Peach on the nose with refreshing cucumber and herb kick. Lively lime zest note gives it wild acidity and minerality, a touch of caramel / nutty notes brings a lingering peppery finish.

This all-koji sake infused with Ume plum is beautiful, light and naturally pink in color. Pronounced aroma of Ume plum and chestnuts with a kick of bitterness with clean cherry and plum flavours.
