Located in untouched forest at the Northern tip of Yamanashi, just downstream from the famous Hakushu Whiskey distillery, Shichiken uses some of the purest water in Japan. The fresh water flows directly off Mount Kaikoma, filtering through layers of 10 million year old granite, and combined with locally grown rice and long-slow fermentation results in sake with sublime acidity that makes it both sharp and fresh.
