Yamadanishiki is rightly regarded as the King of Sakemai (sake rice) and it plays the starring role in this fine Junmai from Hakustsuru. Warm toasted almonds on the nose. Best enjoyed warmed, this is a classic junmai with rich, crisp flavour which complements fresh seafood (crab, oysters etc) as well as tremendous match for tempura, fried foods, and all fuller-flavoured items on Japanese menus. Smokey, nutty top notes are joined by zingy berry-like fruitiness and plenty of rice-driven umami.

Brewed with a rare Sake rice called ‘Aiyama’ (Nanbu Bijin is one of a few producers currently using this variety) and milled down to 50% of its original size, this is a sake of unique character. Toji Junji Matsumori (the head brewer) and team have somehow, inexplicably achieved a sake of supreme balance, delivering acidity, Umami and sweetness all in glorious symphony, capped with a long refreshing finish. This is a London Sake team favourite.
