Delicately flavoured, astonishingly subtle, impeccably balanced, this legendary label is the despair of sake critics in Japan, who confess that its flavour is impossible to describe. This Daiginjo is brewed with Yamadanishiki rice milled to an eye-watering 30% then aged at 1°C for roughly two years, the brewers undoubtedly extract out the limits umami and depth of flavour.
