This gorgeous, peachy nama (unpasteurised) sake pops up for just a limited time during the Summer. The brewers employ a traditional pressing technique that uses gravity (rather than mechanical pressing) to do the hard work of separating the sake necar from the rice lees. While a little more labour intensive and low-yield, the result is a soft, refined and supremely balanced brew. Delightful.
